Erico's sweet debut
Founded by Éric Normand, trained in Quebec by Mr. Bernard Laloi, pastry chef and chocolatier, Érico offered cream sugars and fudges in more than 50 points of sale in Quebec.
1987
New premises and new range of fine chocolates
The small business developed a range of fine chocolates and opened a sales counter in a coffee shop in the Saint-Jean-Baptiste district.
1988
Érico gains popularity
With the rapid growth of the business, Érico moved to more spacious premises on the other side of Saint-Jean Street, in order to accommodate his growing clientele.
1993
The chocolate museum is born
Wishing to increasingly share his passion for chocolate, Éric Normand opened a small chocolate museum, where fans and passers-by could discover the history of chocolate.
2000
Erico's succession
Éric Normand hands over the torch to two passionate chocolatiers and pastry chefs, Cédric Allain and Éric Louinet. The latter have given themselves the mission of perpetuating Erico's philosophy by bringing their own know-how.

Cedric Allain
Passionate about the world of pastry and chocolate making from a very young age, Cédric obtained a pastry chef-chocolatier-glacier diploma and continued advanced training with the Compagnons du Devoir in France.
His 17 years of experience have allowed him not only to perfect his techniques with talented pastry chefs such as Franck Dury Pavet (Fous Desserts pastry shop in Montreal) but also to highlight his creativity by collaborating on the development of new stores, notably a chocolate factory. renowned craftsmanship in the pink city of Toulouse.
He then discovered in chocolate a noble material with unlimited creative and sensory power that he now wishes to share through Érico products.
Eric Louinet
A person with a sweet tooth! From his mother's restaurant, he loved tasting the different pastries she made. He then decided to follow two years of training in pastry and chocolate making.
He left his small hometown for Paris to improve his professional techniques. After around ten years, he opened his own bakery, pastry shop and chocolate shop and the adventure lasted eight wonderful years.
But something was missing, he had been dreaming of it for more than twenty years, and they made the decision as a family to come and settle in Quebec, to start a new sweet adventure at Érico's.
